People who own top of the line stoves don't need it but if you have standard kitchen equipment purchased from Sears or a home store, your oven temperature is almost certain to be off. Not a big deal for macaroni and cheese, bit of a big deal for cakes, souffles, bread, etc.<BR/><BR/>About the gelatin; if you prowl second hand stores/flea markets, keep an eye out for an old Knox gelatin book from the first half of the last century. Lots of delicious gelatin ideas.
